INGREDIENTS
  • 500 grams Sweet Potatoes (Can be substituted with Tapioca)
  • 1 Onion (~ 100 g)
  • 3 Green Chillies (Optional)
  • 5 cloves Garlic
  • 1 tablespoon Red Pepper flakes
  • 1/4 cup Cilantro/Coriander leaves
  • 2 tablespoons Butter/Vegan butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper powder (Optional)
  • 1/2 tablespoon Lemon juice
INSTRUCTIONS
    1. Cook the sweet potatoes. (Can be pressure cooked for 4-5 whistles or baked in an oven for 45 mins at 400F)
    2. Peel the potatoes and grate them and set them aside. (They can be mashed if a grater is not available)
    3. Add butter to a heated pan.
    4. Add the garlic and green chillies and stir fry for a minute.
    5. Add onion and saute for few minutes.
    6. Once the onion is cooked add the red pepper flakes and stir well.
    7. Add the grated potatoes and mix well.
    8. Add cilantro and a squeeze of lemon and mix well.
    9. Sweet potato mofongo is ready to be served
