- Prep all the ingredients. Chop the shallots, peel garlic, chop the ginger.

- Grind the garlic, ginger, dried red chilli, shallots into a coarse paste.
- Add 1/3 cup oil to a hot pan and wait till it gets hot.
- Add the ground paste and fry for 10-12 minutes or until the oil floats separates the paste.
- Add soy sauce, tamarind paste, and salt and cook for a couple of minutes.
- Turn off the heat and let it cool before storing it.
