INGREDIENTS

INSTRUCTIONS

    1. Finely chop onion, tomato, garlic, ginger, and scallions.
    2. Remove the moringa leaves from the stem and wash thoroughly.
    3. Add 1.5 tablespoons of oil to a heated soup pot and turn the stove to medium heat.
    4. Add garlic and saute until it turns a mild golden color.
    5. Add onion, ginger and stir fry until the onion is transparent.
    6. Add the garam masala and fry until aromatic.
    7. Add tomatoes, salt, chilli powder, black pepper powder and turmeric powder.
    8. Stir well and cook until the tomatoes are mushy and fully cooked.
    9. Add the moringa leaves and stir fry for a couple of minutes.
    10. Add 4 cups of water/stock and let it come to a boil and simmer for 5 minutes.
    11. Turn off the stove and garnish with lime juice, scallions and more pepper powder or red pepper flakes.
    12. Moringa soup is ready to serve.

Notes and Tips

  1. If you do not have fresh moringa leaves, you can substitute them with 1.5 tablespoons of moringa powder and a cup of chopped spinach.
  2. Water can be substituted with leftover stock from boiling lentils, chickpea, or other legumes.
