Tapioca Mofongo
INGREDIENTS
INSTRUCTIONS

- Wash and Cook the tapioca root. (Can be pressure cooked for 25 mins or baked in an oven for 45 mins at 400F).
- Peel the tapioca and grate mash them and set them aside.
- Finely chop onion, garlic, green chilies, and cilantro.

- Add butter to a heated pan.
- Add the garlic and green chilies and stir fry until the garlic is aromatic and translucent.
- Add onion and saute for a few minutes.
- Once the onion is cooked add the red pepper flakes and stir well.
- Add the grated tapioca and mix well.
- If the tapioca is very dry you can add water to moisten it.
- Add cilantro and a squeeze of lemon and mix well.
Serve Hot!
