Aloo Gobi (Cauliflower and Potato Stir Fry)
INGREDIENTS

- Chop the cauliflower into bite-sized pieces and blanch in hot water for 30 seconds to a minute.
- Chop the potatoes into bite-sized cubes and set them aside.
- Chop the onion, green chili, and coriander leaves and set them aside.
- Set a large pan/wok on medium heat, add 2 tablespoons of cooking oil.
- Add the cumin seeds and wait for it to sizzle.
- Add the onion, green chili, and asafoetida/hing and stir well.
- Saute for a few minutes until the onion is transparent.
- Add the ginger and garlic paste and saute until aromatic.
- Add the potatoes and stir fry for 3-4 minutes or until it starts to turn transparent.
- Add in the cauliflower and saute for 2-3 minutes.
- Add the turmeric powder, chili powder, cumin powder, salt, and mix well.
- Set the heat to low, cover, and cook for 10-12 minutes. (Check on it and stir it well a couple of times to stop it from sticking to the bottom or burning)
- Check if the potato and cauliflower are cooked. Turn off the heat.
- Garnish with coriander leaves and serve immediately with your choice of bread(roti, phulka, naan) or rice.
