Tapioca Mofongo

INGREDIENTS

INSTRUCTIONS

    1. Wash and Cook the tapioca root. (Can be pressure cooked for 25 mins or baked in an oven for 45 mins at 400F).
    2. Peel the tapioca and grate mash them and set them aside. 
    3. Finely chop onion, garlic, green chilies, and cilantro.
    4. Add butter to a heated pan.
    5. Add the garlic and green chilies and stir fry until the garlic is aromatic and translucent.
    6. Add onion and saute for a few minutes.
    7. Once the onion is cooked add the red pepper flakes and stir well.
    8. Add the grated tapioca and mix well.
    9. If the tapioca is very dry you can add water to moisten it.
    10. Add cilantro and a squeeze of lemon and mix well.

    Serve Hot!
