This recipe yields 10 summer rolls. You can use any vegetable combination you like.

Prep work

    1. Prep all the vegetables by julienning or shredding them into thin and long strips.                                                   
    2. Cook the rice vermicelli as per the package instructions and set it aside.
    3. Set up a large bowl/deep plate with water to dip the rice sheets in.
    4. Use a chopping board or any other surface to make the summer roll.

Making to Summer Roll

    1. Take a rice sheet.
    2. Dip it in water completely for 5 seconds
    3. Place it on the chopping board.
    4. Place all the veggies and vermicelli on the rice paper.
    5. Fold the rice paper over the filling from the bottom up and then fold the sides.
    6. Roll the rice paper all the way through.
    7. Yummy Vietnamese roll is ready to serve!

Directions for the peanut sauce

    1. Mix all the ingredients for the sauce.
    2. Taste and adjust the flavor to your liking.
