INGREDIENTS

INSTRUCTIONS

    1. Chop the bottom part of the lemongrass stalks into slices.
    2. Chop the galangal into slices.
    3. Smash the garlic and set aside.
    4. Chop the tomato into large chunks.
    5. Slice the mushrooms.
    6. Chop the scallions and chilli.
    7. Set a deep bottom pan over medium heat and add 4 cups of water and bring to a boil.
    8. Add the lemongrass, garlic, galangal, kaffir lime leaves and let it boil for 3-4 minutes or until aromatic.
    9. Add soy sauce, Thai chili paste, salt, mix well. Taste and adjust the seasoning.
    10. Add tomatoes, mushrooms and let it cook for 30 seconds.
    11. Turn off the heat.
    12. Serve in a bowl with a garnish of chilli, cilantro, lime juice and chilli oil.
