Vegan Tom Yum Soup

- Chop the bottom part of the lemongrass stalks into slices.
- Chop the galangal into slices.
- Smash the garlic and set aside.
- Chop the tomato into large chunks.
- Slice the mushrooms.
- Chop the scallions and chilli.
- Set a deep bottom pan over medium heat and add 4 cups of water and bring to a boil.
- Add the lemongrass, garlic, galangal, kaffir lime leaves and let it boil for 3-4 minutes or until aromatic.
- Add soy sauce, Thai chili paste, salt, mix well. Taste and adjust the seasoning.
- Add tomatoes, mushrooms and let it cook for 30 seconds.
- Turn off the heat.
- Serve in a bowl with a garnish of chilli, cilantro, lime juice and chilli oil.
