Broken Wheat Tabbouleh

A simple and easy middle eastern salad that tastes so fresh! I was pleasantly surprised when I made this salad for the first time. It is traditionally made with Bulgar but I have used broken wheat instead.

INSTRUCTIONS

    1. Boil 2/3 cup of water in a deep pan.
    2. Add the broken wheat, stir well, set the heat to low, cover, and cook for 10-15 minutes.
    3. Turn off the heat and let it sit for 15 minutes.
    4. In a small bowl add all the ingredients for the dressing, mix well and set aside.
    5. Finely chop the parsley, mint leaves, chili, and tomatoes.
    6. Once the broken wheat is cool, add it to a large bowl.
    7. Add the chopped tomatoes, parsley, mint leaves, chilies, and the dressing and mix well.
    8. You can serve immediately or chill in Refrigerator and serve later.
