A simple and easy middle eastern salad that tastes so fresh! I was pleasantly surprised when I made this salad for the first time. It is traditionally made with Bulgar but I have used broken wheat instead.
Broken Wheat Tabbouleh

INSTRUCTIONS

- Boil 2/3 cup of water in a deep pan.
- Add the broken wheat, stir well, set the heat to low, cover, and cook for 10-15 minutes.
- Turn off the heat and let it sit for 15 minutes.
- In a small bowl add all the ingredients for the dressing, mix well and set aside.
- Finely chop the parsley, mint leaves, chili, and tomatoes.
- Once the broken wheat is cool, add it to a large bowl.
- Add the chopped tomatoes, parsley, mint leaves, chilies, and the dressing and mix well.
- You can serve immediately or chill in Refrigerator and serve later.
