You won’t miss meat with this recipe! It is the perfect substitute for minced meat. This is one of my favorite recipes when I am missing meat. It smells so good that your kitchen will be filled with the sweet aroma of spices.
Soya Kheema

- Boil 3 cups of water, add the granulated soya mix well, turn off the heat, cover, and set aside for 10 mins.
- Finely chop the onion and tomatoes.
- Peel and grind the garlic, ginger, and green chili into a coarse paste.
- Finely chop the cilantro/coriander leaves and set them aside.
- Drain the soya, rinse with water, drain and squeeze excess water and set aside.
- In a large pan over medium heat, add 2 tablespoons of ghee.
- Add the cumin seeds, cardamom, cloves, and cinnamon.
- Let them sizzle and turn aromatic for 30 seconds.
- Add the onion and saute until it starts to turn golden.
- Add the ginger-garlic and chili paste and saute until aromatic.
- Add the turmeric, chili powder, and coriander powder and mix well.
- Add chopped tomatoes and saute until they are soft and mushy.
- Add salt to taste and mix well.
- Add 2 cups water and green peas, cover and cook for 10 minutes.
- Add Kasuri methi and garam masala and mix well.
- Add the drained soya, mix well.
- Add 2 more cups of water, mix well, adjust the seasoning if required.
- Cover and let it simmer on low for 10 minutes.
- Garnish with coriander leaves and serve with roti, phulka, bread, or rice.
